When designing a custom label you can put a space in the first line of Style 1. This will make the text in the label appear centered vertically.

 

When selecting a label you can customize it and choose whether it uses the exhibit number, trial exhibit number, or the doc ID in the design labels menu. You can reach this menu by clicking on the small arrow next to the labels button.
